Infants
Ever since I was in school I found babies and infants truly spectacular to photograph. All you need is a little bit of patience to let the baby get to know you and get comfortable, then just capture them just as they are.
I know children, especially young ones, can be strongly effected by their surroundings. That, to get them truly natural you need to be where they know and trust. This is why I take my studio to them, why sittings rarely have set times.
You cannot tell a baby to be happy, you just have to be ready when they are.
